The best khow suey outside of Myanmar can be found on a vibrant corner in Randher, Surat’s ancient Muslim suburb across the Tapi. But when I’m consumed by intense craving – and a four-hour journey to another state seems like a stretch – I just hop on the train headed to Fort for the coconut-iest, crunchiest, spiciest khow suey in town.

Stepping inside Burma Burma feels like a leap – not just across the border, but across time as well. Traditional Bagan umbrellas cover the teak wood ceiling. Rustic prayer wheels beckon diners for a spin. Ornate bronze kettles and tiny teacups line the bar. Bamboo baskets, black and white photographs and brightly coloured toys sit proudly on wooden shelves.

I always have to shut my jaw while accepting the shawl offered by courteous servers and then settle in to study the menu. Apart from the usual suspects, delicacies like Pyan Boo Palata (creamed corn with crisp Burmese paratha) and Tayat Thi Thoke (raw mango shreds with cabbage and chilly) ensure that you don’t miss your tipple and tangdi. Smoky avocado ice cream and Oh No Na Nat Coco Pina pique your curiosity and placate your sweet tooth. Vegetarians, here’s a foolproof recipe for nirvana.
